Ingredients

113g unsalted butter

150g granulated sugar

2 eggs

1 tsp vanilla extract

64g all-purpose flour

30g cocoa powder

90g semi-sweet chocolate

120g milk chocolate

120g white chocolate

480ml heavy cream

2 tbsp powdered sugar

2 tsp gelatin powder


Instructions

1. Preheat your oven to 175°C (350°F) and line a muffin tin with silicone or paper liners.

2. Melt the butter and semi-sweet chocolate together until smooth.

3. Whisk in the sugar, then the eggs and vanilla.

4. Stir in flour and cocoa powder until fully incorporated.

5. Spoon batter into liners and bake for 15–18 minutes. Let cool completely.

6. Melt the milk chocolate and let it cool slightly.

7. Whip 240ml of cream to soft peaks.

8. Bloom 1 tsp gelatin in 1 tbsp water, dissolve it, and stir into melted milk chocolate.

9. Fold whipped cream into chocolate mixture and layer over cooled brownies. Chill.

10. Repeat the same process with white chocolate, cream, and gelatin for the top layer. Chill again.

11. Whip remaining cream with powdered sugar and pipe on top.

12. Drizzle with ganache and garnish with chocolate shards before serving.

Notes

Let mousse layers fully chill before adding the next to prevent blending.

Use a piping bag for neat, even layers.

For best results, garnish just before serving to keep toppings fresh.
