Instructions
1. In a large bowl, whisk together the 2 cups gluten free all-purpose flour blend, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt until evenly combined.
2. Add 1 cup unsweetened coconut yogurt, 1 tablespoon olive oil from the total 2 tablespoons, and 1/4 cup warm water. Stir until a soft dough forms, then knead gently until smooth.
3. Divide the dough into 6 equal portions. Roll each portion into a ball and flatten into an oval or round shape about 1/4 inch thick.
4. Heat a skillet over medium heat. Use the remaining 1 tablespoon olive oil gradually to lightly brush the pan or naan as you cook. Cook each naan for 2 to 3 minutes per side until golden brown with charred spots.
