Ingredients
1 cup raw cashews (soaked)
3 cups fresh spinach or 1 ½ cups frozen chopped spinach (thawed and drained)
3 tablespoons nutritional yeast
2 cloves garlic
2 tablespoons lemon juice
1 teaspoon onion powder
¾ cup unsweetened plant-based milk (almond, oat, or soy)
½ teaspoon salt
¼ teaspoon ground black pepper
1 round sourdough bread loaf (for the bowl)
Instructions
1. Soak the cashews in hot water for 20–30 minutes to soften.
2. Sauté fresh spinach until wilted or thaw frozen spinach and squeeze out excess water.
3. In a high-speed blender, combine the soaked cashews, nutritional yeast, garlic, lemon juice, onion powder, plant milk, salt, and pepper. Blend until smooth.
4. Transfer mixture to a bowl and fold in the cooked spinach until well combined.
5. Slice off the top of the sourdough loaf and hollow out the center to make a bowl.
6. Fill the bread bowl with the spinach dip and sprinkle with extra pepper or chili flakes if desired.
7. Serve with the removed bread pieces, crackers, or fresh vegetables.
Notes
Make sure to soak the cashews thoroughly if you’re not using a high-speed blender.
For a spicy version, add crushed red pepper or a dash of hot sauce to the blended mix.
To make ahead, store the dip separately from the bread bowl and fill it right before serving.
