Ingredients

2 1/4 cups all-purpose flour

1/2 tsp baking soda

1/2 tsp salt

1 cup unsalted butter, softened

1/2 cup granulated sugar

3/4 cup brown sugar, packed

2 large eggs

2 tsp vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup white chocolate chips

1/4 cup crushed peppermint candies

2 tbsp sparkling sanding sugar


Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

2. In a medium bowl, whisk together flour, baking soda, and salt.

3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).

4. Beat in the eggs one at a time, then stir in vanilla extract.

5. Gradually mix in the dry ingredients until just combined. Do not overmix.

6. Fold in semi-sweet and white chocolate chips evenly.

7. Scoop dough balls onto baking sheet, 2 inches apart. Top with extra chocolate chips if desired, then sprinkle with crushed peppermint and sanding sugar.

8. Bake for 10-12 minutes, or until edges are golden and centers are just set. Let cool for 5 minutes before transferring to a wire rack.

Notes

For a bolder peppermint flavor, add 1/4 tsp peppermint extract.

Chill the dough for 30 minutes if you want thicker cookies.

Store in an airtight container for up to 5 days or freeze for longer storage.
