Ingredients
1 lb spicy Italian sausage
6 slices thick-cut bacon
1 yellow onion, diced
4 cloves garlic, minced
4 medium russet potatoes, peeled and diced
6 cups chicken broth
1 cup heavy cream
4 cups fresh kale, chopped
Salt and black pepper to taste
Crushed red pepper flakes (optional)
Instructions
1. In a large Dutch oven or soup pot, cook the bacon over medium heat until crispy. Remove and set aside on a paper towel-lined plate.
2. Add the sausage to the pot and cook until browned, breaking it up into crumbles. Drain excess fat if needed.
3. Add diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and sauté for 30 seconds.
4. Add potatoes and chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 15 minutes or until potatoes are fork-tender.
5. Stir in heavy cream and chopped kale. Simmer for another 5 minutes until kale is wilted.
6. Season with salt, pepper, and red pepper flakes to taste. Serve hot with crispy bacon on top.
Notes
For a lighter version, use turkey sausage and half-and-half instead of heavy cream.
Add spinach at the end if you prefer it over kale.
Store leftovers without bacon on top to preserve its crispiness.
