Ingredients
4 boneless skinless chicken thighs
1 tablespoon olive oil
1 cup gluten-free breadcrumbs
0.25 cup finely grated Parmesan cheese
1 teaspoon paprika
1 teaspoon garlic powder
0.5 teaspoon onion powder
0.75 teaspoon salt
0.5 teaspoon black pepper
2 large eggs
Instructions
1. Preheat your air fryer to 400°F (200°C) for 5 minutes.
2. Pat chicken dry and toss with olive oil.
3. Beat eggs in one bowl. In another, combine breadcrumbs, Parmesan, paprika, garlic powder, onion powder, salt, and pepper.
4. Dip chicken in egg, then breadcrumb mixture, pressing coating on all sides.
5. Place chicken in air fryer in a single layer.
6. Cook at 400°F for 12–14 minutes, flipping halfway, until golden and internal temp is 165°F.
Notes
Preheating the air fryer ensures crispiness right from the start.
Don’t overcrowd the basket to let hot air circulate evenly.
Use a meat thermometer for doneness; aim for 165°F internal temp.
