Description

This 30-Minute Jalapeño Chicken is a bold, quick dinner with juicy chicken bites, fresh jalapeños, garlic, ginger, and a sticky sweet-savory sauce served over rice. Ingredients

1 1/2 pounds boneless skinless chicken breast, cut into bite-size pieces

3 medium jalapeños, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup low-sodium soy sauce

2 tablespoons honey

1 tablespoon lime juice

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons neutral oil

1 teaspoon sesame oil

1/2 teaspoon black pepper

4 cups cooked white rice, for serving

2 tablespoons sliced green onions, optional

1 teaspoon sesame seeds, optional


Instructions

1. Pat the chicken pieces dry, then toss them with cornstarch and black pepper until lightly coated.

2. In a small bowl, whisk together soy sauce, honey, lime juice, rice vinegar, garlic, and ginger.

3. Heat neutral oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 6 to 8 minutes, stirring occasionally, until golden and cooked through.

4. Add the sliced jalapeños and cook for 1 to 2 minutes until slightly softened.

5. Pour the sauce into the skillet and stir well, scraping up any browned bits from the pan. Simmer for 2 to 4 minutes until the sauce thickens and coats the chicken.

6. Turn off the heat and stir in sesame oil.

7. Serve hot over cooked white rice with green onions and sesame seeds if desired.

Notes

Use fewer jalapeños and remove the seeds for a milder version.

Cut the chicken into even pieces so it cooks quickly and evenly.

Let the sauce bubble until glossy so it clings to the chicken instead of staying thin.
