Ingredients

12 oz fettuccine pasta

4 tablespoons butter

8 oz cream cheese, full-fat, softened

1 cup heavy cream

1/2 cup whole milk

3 cloves garlic, minced

1 cup Parmesan cheese, grated

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Bring a large pot of salted water to a boil. Add fettuccine and cook until al dente. Drain and reserve 1/2 cup pasta water.

2. In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.

3. Lower heat and add cream cheese. Stir until melted and smooth.

4. Whisk in heavy cream and milk gradually until the sauce is well blended.

5. Stir in Parmesan cheese, salt, and pepper. Continue stirring until cheese is melted and sauce thickens.

6. Add cooked pasta and toss well to coat. Use reserved pasta water to adjust sauce consistency if needed.

7. Garnish with chopped parsley and serve immediately.

Notes

Let the cream cheese soften at room temperature before using to help it melt more easily.

Use freshly grated Parmesan for best flavor and smoothest texture.

For a lighter version, substitute half-and-half for the cream.
