Ingredients

1 cup unsalted butter

1/2 cup powdered sugar

2 cups all-purpose flour

1 cup finely ground almonds

1/4 teaspoon salt

2 oz melted dark chocolate (optional, for drizzle)


Instructions

1. In a large mixing bowl, beat together the unsalted butter and 1/2 cup powdered sugar until light and fluffy.

2. Mix in the vanilla extract and finely ground almonds until evenly combined.

3. Sift in the flour and salt. Mix until a soft dough forms. Do not overmix.

4. Take about 1 tablespoon of dough and shape into a log, curving slightly to form a crescent. Repeat to make 24 cookies.

5. Chill shaped cookies on a baking sheet in the fridge for 30 minutes.

6. Preheat oven to 325°F (165°C). Bake cookies for 14–16 minutes or until the bottoms are lightly golden.

7. Let cookies cool for 5 minutes, then transfer to a wire rack. While still warm, dust generously with powdered sugar.

8. Optional: once cooled completely, drizzle with melted dark chocolate.
