Ingredients

2 pounds ground beef

1 cup breadcrumbs

1 medium onion, finely chopped

2 large eggs

1 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1/2 cup ketchup

3/4 cup ketchup

2 tablespoons brown sugar

1 tablespoon yellow mustard


Instructions

1. Preheat the oven to 350°F and lightly grease a loaf pan or line a baking sheet with parchment paper.

2. In a large bowl, combine the breadcrumbs and milk, then let the mixture sit for 2 minutes to soften.

3. Add the ground beef, chopped onion, eggs, salt, black pepper, garlic powder, and 1/2 cup ketchup. Mix gently until everything is just combined.

4. Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.

5. In a small bowl, stir together 3/4 cup ketchup, brown sugar, and yellow mustard until smooth.

6. Spread the glaze evenly over the top of the meatloaf.

7. Bake for 55 to 65 minutes, or until the internal temperature reaches 160°F.

8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

Use beef with a little fat, such as 80/20, for the best moist texture.
