Ingredients

3 large eggs

3/4 cup granulated sugar

1/2 cup melted butter

1 3/4 cups all-purpose flour

1 1/2 teaspoons anise extract

1 teaspoon vanilla extract

2 teaspoons baking powder

1/8 teaspoon salt


Instructions

1. In a large mixing bowl, beat the 3 eggs and 3/4 cup granulated sugar together for about 2 minutes until light and thickened.

2. Stir in the 1 1/2 teaspoons anise extract and 1 teaspoon vanilla extract, followed by the 1/2 cup melted butter. Mix until well combined.

3. In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 2 teaspoons baking powder, and 1/8 teaspoon salt. Gradually add to the wet ingredients, stirring until a thick batter forms.

4. Preheat your pizzelle iron according to its instructions. If it’s not nonstick, lightly grease with oil or cooking spray.

5. Drop about 1 tablespoon of batter onto the center of each mold. Close the lid and cook for 20 to 30 seconds, or until golden.

6. Use a fork to carefully remove the pizzelle and transfer to a cooling rack. Let them cool and crisp before storing.

Notes

Always preheat the pizzelle iron for even browning.

Store pizzelle in an airtight container layered with wax paper to retain crispness.

You can substitute anise extract with almond, lemon, or orange extract for different flavor twists.
