Baklava Cream Sandwich Cookies are a quick dessert idea that feels elegant and indulgent at the same time. Ingredients
2 sheets puff pastry, thawed
2 tablespoons unsalted butter, melted
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
8 ounces cream cheese, softened
8 ounces mascarpone cheese
3/4 cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon honey, plus more for drizzling
1/2 cup finely chopped pistachios
1/4 cup finely chopped walnuts
1/8 teaspoon sea salt
Instructions
1. Preheat the oven to 400 F and line two baking sheets with parchment paper.
2. Lightly flour your work surface and roll the puff pastry just enough to smooth the folds.
3. Cut out 24 equal rounds using a cookie cutter and place them on the prepared baking sheets.
4. Brush the tops with melted butter, then sprinkle with the granulated sugar and ground cinnamon.
5. Bake for 12 to 15 minutes, or until the pastry rounds are puffed and deeply golden.
6. Transfer the pastry to a rack and let it cool completely.
7. In a mixing bowl, beat the cream cheese and mascarpone until smooth and fluffy.
8. Add the powdered sugar, vanilla extract, honey, and sea salt, then beat until creamy and fully combined.
9. Fold in 2 tablespoons of the chopped pistachios and all of the chopped walnuts for extra texture.
10. Pipe or spoon the filling onto 12 of the cooled pastry rounds.
11. Top with the remaining pastry rounds and press gently to make sandwich cookies.
12. Drizzle lightly with extra honey and sprinkle the tops with the remaining pistachios before serving.
Notes
Use fully chilled puff pastry so the layers bake up flaky and defined.
Let the pastry cool completely before filling so the cream stays thick and stable.
For the best texture, assemble the cookies shortly before serving and drizzle with honey at the end.
