Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup mashed ripe banana
1/3 cup brown sugar
1 large egg
1/4 cup plain Greek yogurt
1/4 cup milk
2 tablespoons melted butter
1 teaspoon vanilla extract
3/4 cup semi-sweet chocolate chips
1/4 cup heavy cream
1/3 cup chopped walnuts
Instructions
1. Preheat the oven to 350°F and grease a standard doughnut pan well.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
3. In a large bowl, whisk the mashed banana, brown sugar, egg, Greek yogurt, milk, melted butter, and vanilla extract until smooth.
4. Add the dry ingredients to the wet ingredients and stir just until combined.
5. Pipe or spoon the batter into the doughnut pan, filling each well about three-quarters full.
6. Bake for 10 to 12 minutes, or until the doughnuts spring back lightly and a toothpick comes out clean.
7. Cool in the pan for 5 minutes, then transfer the doughnuts to a wire rack to cool completely.
8. Microwave the chocolate chips and heavy cream in 15-second bursts, stirring until smooth and glossy.
9. Dip the cooled doughnuts into the chocolate glaze and sprinkle with chopped walnuts while the glaze is still soft.
10. Let the glaze set slightly before serving.
Notes
Use very ripe bananas with brown spots for the sweetest flavor and softest texture.
Do not overmix the batter after adding the flour, or the doughnuts may bake up dense.
Let the doughnuts cool completely before dipping them in glaze so the chocolate sets smoothly.
