Ingredients
1 1/2 pounds salmon, cut into bite-sized cubes
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons sriracha
1 tablespoon honey
1 tablespoon lime juice
1 tablespoon parsley, chopped
Instructions
1. Preheat the oven to 400°F and lightly grease a baking dish or line a baking sheet with parchment paper.
2. Pat the salmon dry and cut it into evenly sized bite-sized cubes.
3. Place the salmon in a bowl and toss with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
4. Arrange the salmon pieces in a single layer in the prepared dish or on the baking sheet.
5. Bake for 10 to 12 minutes, or until the salmon is opaque, tender, and lightly golden around the edges.
6. While the salmon bakes, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl.
7. Remove the salmon from the oven and drizzle the sauce over the top, or toss the salmon gently with the sauce for fuller coverage.
8. Sprinkle with chopped parsley and serve immediately.
Notes
Pat the salmon dry before seasoning so it roasts well and does not steam.
Adjust the sriracha to make the sauce milder or spicier based on your taste.
For the best texture, add extra sauce after reheating leftovers instead of baking the salmon with all the sauce on it.
