Ingredients
1 pound ground beef
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 can black beans, drained and rinsed
1 can diced green chiles
2 cups red enchilada sauce
8 corn tortillas
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
2 tablespoons chopped fresh cilantro
1/2 cup sour cream
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Heat the olive oil in a large skillet over medium heat, then cook the diced onion until softened.
3. Stir in the garlic and cook for 30 seconds, then add the ground beef and cook until browned.
4. Drain any excess grease and season the beef with cumin, chili powder, smoked paprika, salt, and black pepper.
5. Stir in the black beans, green chiles, and 1 cup of the enchilada sauce, then simmer for 3 to 4 minutes.
6. Spread a thin layer of enchilada sauce into the bottom of the baking dish.
7. Add a layer of corn tortillas, cutting as needed to fit the dish.
8. Spoon over part of the beef mixture and top with some cheddar and Monterey Jack cheese.
9. Repeat the layers of sauce, tortillas, beef mixture, and cheese until all ingredients are used, finishing with sauce and cheese on top.
10. Cover loosely with foil and bake for 20 minutes.
11. Remove the foil and bake for 10 to 15 more minutes, until the cheese is melted and bubbly.
12. Let the casserole rest for 10 minutes, then garnish with cilantro and serve with sour cream.
Notes
Use freshly shredded cheese for the smoothest melt and best texture.
Let the casserole rest before slicing so the layers hold together better.
Warm the tortillas briefly before layering to keep them pliable and easier to fit into the dish.
