Ingredients

1 pound ground beef

1 tablespoon olive oil

1 small yellow onion, diced

3 cloves garlic, minced

2 tablespoons tomato paste

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 cups red enchilada sauce, divided

8 small flour tortillas

1 1/2 cups shredded cheddar cheese

1 1/2 cups shredded Monterey Jack cheese

2 tablespoons fresh cilantro, chopped

1/2 cup sour cream, for serving


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened.

3. Stir in the minced garlic and cook for 30 seconds until fragrant.

4. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.

5. Stir in the tomato paste, cumin, chili powder, paprika, salt, black pepper, and 1/2 cup of the enchilada sauce. Simmer for 2 to 3 minutes.

6. Spread 1/2 cup of enchilada sauce over the bottom of the baking dish.

7. Warm the tortillas until pliable. Fill each tortilla with the beef mixture and a little of the shredded cheese, then roll tightly.

8. Place the rolled tortillas seam-side down in the prepared baking dish.

9. Pour the remaining 1 cup enchilada sauce evenly over the enchiladas.

10. Sprinkle the cheddar cheese and Monterey Jack cheese over the top.

11. Bake for 20 to 25 minutes until the cheese is melted and bubbly.

12. Let rest for 5 minutes, then garnish with chopped cilantro and serve with sour cream.

Notes

Use freshly shredded cheese for the smoothest melt and best texture.

Warm the tortillas before rolling so they do not crack or split.

Let the enchiladas rest for a few minutes after baking so they hold together better when served.
