Ingredients
30 ounces frozen shredded hashbrowns, thawed
2 cups shredded sharp cheddar cheese, divided
1 cup sour cream
10.5 ounces cream of chicken soup
1/2 cup unsalted butter, melted and divided
1/2 cup finely chopped yellow onion
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
2 cups crushed cornflakes or crushed buttery crackers
2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
2. Pat the thawed hashbrowns dry with paper towels to remove extra moisture.
3. In a large bowl, mix sour cream, cream of chicken soup, 1/4 cup melted butter, onion, garlic powder, salt, and black pepper until smooth.
4. Fold in the thawed hashbrowns and 1 1/2 cups cheddar cheese until evenly coated.
5. Spread the mixture into the prepared baking dish without packing it down too firmly.
6. Sprinkle the remaining 1/2 cup cheddar cheese over the top.
7. Mix the crushed cornflakes or crackers with the remaining 1/4 cup melted butter, then scatter over the casserole.
8. Bake uncovered for 45 to 50 minutes, until hot, bubbling, and golden brown on top.
9. Let the casserole rest for 8 to 10 minutes before serving.
10. Garnish with fresh parsley and serve warm.
Notes
Pat the thawed hashbrowns dry before mixing so the casserole bakes creamy instead of watery.
Add the crunchy topping right before baking for the best golden texture.
Let the casserole rest after baking so the creamy filling sets and scoops cleanly.
