2 pounds Yukon Gold potatoes, peeled and diced

4 cups chicken broth

1 cup whole milk

1 cup heavy cream

1 1/2 cups shredded sharp cheddar cheese

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 cup sour cream

1/4 cup sliced green onions

2 tablespoons chopped fresh parsley


Instructions

1. Peel and dice the potatoes, then chop the onion, carrots, celery, and garlic.

2. Melt the butter in a large soup pot over medium heat. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until softened.

3. Stir in the garlic and cook for 30 seconds until fragrant.

4. Sprinkle the flour over the vegetables and stir for 1 minute to create a light thickening base.

5. Slowly pour in the chicken broth while stirring, then add the potatoes, salt, black pepper, and dried thyme.

6. Bring the soup to a gentle boil, reduce the heat, and simmer for 15 to 20 minutes until the potatoes are fork-tender.

7. Stir in the whole milk and heavy cream, then warm the soup gently without boiling.

8. Mash some of the potatoes in the pot for a thicker texture while leaving some chunks whole.

9. Remove the pot from the heat and stir in the cheddar cheese until melted.

10. Stir in the sour cream, taste, and adjust seasoning if needed.

11. Serve warm with green onions, parsley, extra cheddar, and black pepper.

Notes

Use Yukon Gold potatoes for a buttery texture, or mix them with russet potatoes for a thicker soup.

Do not boil the soup hard after adding milk, cream, and cheese, because gentle heat keeps the texture smooth.

For extra richness, top each bowl with crispy bacon, more cheddar, sour cream, or green onions.
