Ingredients
2 pounds boneless skinless chicken breasts
2 cups low-sodium chicken broth
2 cups heavy cream
8 ounces cream cheese, softened
4 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups freshly grated Parmesan cheese
12 ounces penne pasta
2 tablespoons chopped fresh parsley
1 tablespoon butter
Instructions
1. Lightly grease the slow cooker with the butter.
2. Add the chicken breasts to the slow cooker.
3. Pour in the chicken broth and heavy cream.
4. Add the softened cream cheese, minced garlic, Italian seasoning, salt, and black pepper.
5. Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours, until the chicken is fully cooked and tender.
6. Remove the chicken from the slow cooker and shred it with two forks.
7. Stir the sauce in the slow cooker until the cream cheese is fully blended.
8. Add the Parmesan cheese and stir until the sauce is smooth and creamy.
9. Return the shredded chicken to the slow cooker and mix well.
10. Cook the penne pasta separately in salted water until al dente, then drain.
