Ingredients
3 medium ripe bananas, mashed
1/2 cup unsalted butter, melted
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
2 large eggs
1/3 cup Greek yogurt or sour cream
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2/3 cup Biscoff spread, divided
1 small banana, thinly sliced for topping
Instructions
1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan and line it with parchment paper.
2. Mash the ripe bananas in a large mixing bowl until mostly smooth.
3. Whisk in the melted butter, brown sugar, granulated sugar, eggs, Greek yogurt, and vanilla extract until combined.
4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
5. Fold the dry ingredients into the wet ingredients just until combined. Do not overmix.
6. Warm the Biscoff spread for 10 to 15 seconds until spoonable.
7. Add half of the banana bread batter to the loaf pan, spoon half of the Biscoff over it, then add the remaining batter.
8. Spoon the remaining Biscoff on top and gently swirl it through the batter with a butter knife.
9. Add banana slices on top, pressing them lightly into the batter.
10. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
11. Cool in the pan for 15 minutes, then lift out and cool completely on a wire rack before slicing.
