Ingredients

1 cup unsalted butter, melted

1 cup light brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

3/4 cup Biscoff spread, divided

2 cups all-purpose flour

1/2 teaspoon salt

1 cup white chocolate chips

8 Biscoff cookies, roughly crushed


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper.

2. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and glossy.

3. Add the eggs one at a time, then mix in the vanilla extract and 1/2 cup of the Biscoff spread.

4. Stir in the flour and salt just until combined.

5. Fold in the white chocolate chips and crushed Biscoff cookies.

6. Spread the batter evenly into the prepared pan.

7. Warm the remaining 1/4 cup Biscoff spread slightly, spoon it over the batter, and swirl it gently with a knife.

8. Bake for 28 to 34 minutes, until the edges are golden and the center is just set.

9. Let the blondies cool completely in the pan before lifting out and slicing into squares.

Notes

Do not overbake the blondies or they will lose their soft, chewy center.

Slightly warming the Biscoff spread makes it easier to swirl across the top.

For cleaner slices, chill the blondies for 20 minutes before cutting.
