Ingredients

16 Biscoff cookies

2 cups vanilla ice cream, slightly softened

3 tablespoons Biscoff cookie butter

1/2 cup crushed Biscoff cookies

1 pinch sea salt


Instructions

1. Line a small baking sheet or freezer-safe plate with parchment paper.

2. Let the vanilla ice cream soften for 5 to 8 minutes, until scoopable but not melted.

3. Place 8 Biscoff cookies flat side up on the prepared tray.

4. Spread a thin layer of Biscoff cookie butter over the flat side of each cookie.

5. Add about 2 tablespoons of softened ice cream onto each cookie and gently spread it to the edges.

6. Top each one with another Biscoff cookie and press gently to form a sandwich.

7. Roll the exposed ice cream edges in crushed Biscoff cookies and sprinkle lightly with sea salt if desired.

8. Freeze for at least 2 hours, or until firm, before serving.

Notes

Use firm, creamy ice cream so the sandwiches hold their shape after freezing.

Work quickly during assembly so the ice cream does not melt before the sandwiches are formed.
