Ingredients

4 large croissants

4 eggs

8 slices bacon

4 slices cheddar cheese (or cheese of choice)

1 cup fresh arugula or baby spinach

1 tablespoon butter or oil (for frying)

Instructions

1. Slice the croissants in half horizontally. Toast lightly if desired.

2. In a skillet over medium heat, cook the bacon until crispy. Set aside on a paper towel-lined plate.

3. In the same skillet, fry or scramble the eggs to your liking. Season with salt and pepper.

4. Add a layer of greens to the bottom half of each croissant.

5. Top with a cooked egg, 2 strips of bacon, and 1 slice of cheese.

6. Close the sandwich with the top croissant half and press gently.

7. Optional: Place assembled sandwiches in a 350°F oven for 5 minutes to melt the cheese.

8. Serve warm or wrap and store for later!

Notes

Toasting the croissant enhances the texture and flavor.

For a vegetarian version, substitute bacon with sautéed mushrooms or avocado.

To freeze, wrap tightly and store for up to one month. Reheat in oven for best texture.
