Description

Candy Cane Brownie Bombs are a festive no-bake-style holiday dessert made with fudgy brownie centers, smooth chocolate coating, and crunchy peppermint candy on top. Ingredients

1 pan baked fudgy brownies, about 8x8 inches, cooled

4 ounces cream cheese, softened

1/4 teaspoon peppermint extract

1/8 teaspoon fine sea salt

2 cups semi-sweet chocolate chips

1 tablespoon coconut oil or shortening

1/2 cup crushed candy canes


Instructions

1. Crumble the cooled brownies into a large mixing bowl, removing any very crisp edges if needed.

2. Add softened cream cheese, peppermint extract, and fine sea salt to the brownie crumbs.

3. Mix until the brownie mixture holds together when pressed.

4. Scoop tablespoon-size portions and roll them into smooth balls.

5. Place the balls on a parchment-lined baking sheet and chill for 30 minutes.

6. Melt the chocolate chips with coconut oil in 20-second microwave bursts, stirring until smooth.

7. Dip each chilled brownie ball into the melted chocolate and let the excess drip off.

8. Place each dipped ball back on the parchment and immediately sprinkle with crushed candy canes.

9. Chill for 10 to 15 minutes, or until the chocolate coating is fully set.

10. Serve chilled or at cool room temperature.

Notes

Use fudgy brownies instead of cakey brownies for the best truffle-like center.

Chill the brownie balls before dipping so they stay round and do not fall apart in the chocolate.

Add the crushed candy canes while the chocolate is still wet so the peppermint topping sticks properly.
