1 1/2 cups chocolate sandwich cookie crumbs

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/2 teaspoon salt, divided

24 ounces cream cheese, softened

3/4 cup granulated sugar

1/2 cup sour cream

3 large eggs

3/4 cup heavy cream

1 1/2 cups semi-sweet chocolate chips

3/4 cup caramel sauce

1 cup brownie chunks


Instructions

1. Preheat the oven to 325°F. Grease a 9-inch springform pan and line the bottom with parchment paper.

2. Mix chocolate sandwich cookie crumbs with 5 tablespoons melted butter, then press into the bottom of the pan. Bake for 8 minutes.

3. Whisk 1/2 cup melted butter, 1/2 cup granulated sugar, brown sugar, 2 eggs, and 1 teaspoon vanilla until smooth.

4. Stir in flour, cocoa powder, and 1/4 teaspoon salt just until combined.

5. Spread brownie batter over the baked crust and bake for 18 to 22 minutes, until the top is set but the center is still slightly soft.

6. Beat cream cheese with 3/4 cup granulated sugar until smooth and creamy.

7. Mix in sour cream and 1 teaspoon vanilla, then add 3 eggs one at a time on low speed.

8. Pour cheesecake filling over the brownie layer and smooth the top.

9. Bake for 55 to 65 minutes, until the edges are set and the center still has a gentle jiggle.

10. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.

11. Cool to room temperature, then refrigerate for at least 6 hours or overnight.

12. Warm heavy cream until steaming, pour over chocolate chips, rest for 2 minutes, then stir until smooth.

13. Spread ganache over the chilled cheesecake, top with brownie chunks, and drizzle with caramel sauce.

14. Slice with a warm clean knife and serve chilled.

Notes

Use room-temperature cream cheese so the cheesecake filling turns smooth without lumps.

Do not overbake the cheesecake; the center should still jiggle slightly when the oven is turned off.
