Ingredients

2 pounds baby potatoes, cut into bite-size pieces

2 cups shredded sharp cheddar cheese, divided

8 slices bacon, cooked and crumbled

1 cup sour cream

1/2 cup mayonnaise

3 tablespoons butter, melted

3 cloves garlic, minced

1/2 cup onion, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup green onions, sliced


Instructions

1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.

2. Wash and dry the baby potatoes, then cut them into bite-size pieces.

3. Cook the bacon until crisp, then crumble it and set it aside.

4. In a large mixing bowl, stir together the sour cream, mayonnaise, melted butter, garlic, onion, salt, and black pepper.

5. Add the potatoes to the bowl and toss until fully coated.

6. Fold in 1 1/2 cups of the shredded cheddar cheese and most of the crumbled bacon.

7. Spread the potato mixture evenly into the prepared baking dish.

8. Top with the remaining 1/2 cup cheddar cheese and the rest of the bacon.

9. Bake for 45 to 55 minutes, until the potatoes are fork-tender and the top is hot and bubbly.

10. Rest for 5 to 10 minutes, then sprinkle with sliced green onions before serving.

Notes

For extra crispy edges, spread the potatoes in an even layer and avoid overcrowding the baking dish.

Sharp cheddar gives the best bold flavor, but you can mix in Monterey Jack or Colby for a smoother melt.
