Ingredients
3 pounds potatoes
1 cup heavy cream
1 cup whole milk
2 cups shredded cheddar cheese
4 tablespoons butter
3 tablespoons flour
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon pepper
1 teaspoon fresh thyme (optional)
Instructions
1. Peel and slice your potatoes into thin, even rounds. Use a mandoline slicer for consistency.
2. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to make a roux.
3. Gradually whisk in heavy cream and milk. Simmer until slightly thickened.
4. Add garlic, salt, pepper, and cheese to the sauce. Stir until melted and smooth.
5. In a greased baking dish, layer potatoes and pour sauce between each layer.
6. Finish with sauce and extra cheese on top.
7. Cover with foil and bake at 375°F (190°C) for 45 minutes.
