Description

These Cherry Chocolate Chip Cookies are soft, chewy, buttery, and packed with melty chocolate chips and sweet cherry pieces in every bite. Ingredients

1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

1/4 teaspoon almond extract, optional

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups semi-sweet chocolate chips

3/4 cup maraschino cherries, drained, patted dry, and chopped


Instructions

1. Drain the maraschino cherries well, chop them, and pat them very dry with paper towels.

2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and smooth.

3. Add the egg, vanilla extract, and optional almond extract, then mix until combined.

4. In a separate bowl, whisk together the flour, baking soda, and salt.

5. Add the dry ingredients to the wet ingredients and mix on low speed until a soft dough forms.

6. Fold in the chocolate chips and chopped cherries gently.

7. Cover and chill the dough for 30 minutes.

8. Preheat the oven to 350°F and line baking sheets with parchment paper.

9. Scoop the dough into 1 1/2-tablespoon portions and place them a few inches apart.

10. Bake for 10 to 12 minutes, until the edges are lightly golden and the centers still look slightly soft.

11. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.

Notes

Pat the cherries very dry before adding them to the dough so the cookies stay thick and chewy.

Chill the dough for at least 30 minutes to help prevent spreading and improve flavor.

Press a few extra chocolate chips or cherry pieces onto the warm cookies for a bakery-style finish.
