Ingredients

1 1/2 pounds boneless skinless chicken breasts cut into bite sized pieces

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 teaspoon paprika

1 teaspoon garlic powder

1 tablespoon olive oil

3 tablespoons unsalted butter

4 cloves garlic minced

1/3 cup chicken broth

1 tablespoon fresh lemon juice

1/4 teaspoon crushed red pepper flakes optional

2 tablespoons fresh parsley chopped


Instructions

1. Cut the chicken breasts into small bite sized pieces and pat them dry with paper towels so they brown instead of steam in the pan.

2. Add the chicken pieces to a mixing bowl and season with salt, black pepper, paprika, and garlic powder, tossing until every piece is evenly coated.

3. Heat the olive oil in a large skillet over medium high heat until the oil shimmers and a small piece of chicken sizzles on contact.

4. Add the seasoned chicken in a single layer, working in batches if needed, and sear for 2 to 3 minutes without moving the pieces so they develop a golden crust.

5. Stir and continue cooking the chicken for another 3 to 4 minutes, until it is browned on all sides and cooked through, then transfer the chicken to a plate and set aside.

6. Reduce the heat to medium and add the butter to the same skillet, stirring as it melts and using a wooden spoon to scrape up any browned bits from the bottom of the pan.

7. Stir in the minced garlic and cook for 30 to 60 seconds, just until fragrant and lightly softened, being careful not to let it brown.

8. Pour in the chicken broth and lemon juice, add the crushed red pepper flakes if using, and simmer the sauce for 2 to 3 minutes until slightly reduced and glossy.

9. Return the cooked chicken and any accumulated juices to the skillet, tossing to coat all the pieces in the garlic butter sauce and simmering for 1 to 2 minutes to heat through.

10. Turn off the heat, sprinkle the chicken bites with chopped fresh parsley, taste and adjust seasoning with extra salt, pepper, or lemon juice if needed, then serve immediately with your favorite sides.

Notes

Cut the chicken into evenly sized pieces so they cook at the same rate and stay juicy.
