Description

Ingredients

1 pound ground chicken

1 tablespoon avocado oil or olive oil

4 cups shredded green cabbage

1 cup shredded carrots

1 cup shredded purple cabbage

4 green onions, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup low-sodium soy sauce

1 tablespoon rice vinegar

2 teaspoons sesame oil

1 teaspoon sriracha or chili garlic sauce, optional

1/4 teaspoon black pepper

1 tablespoon sesame seeds, for garnish


Instructions

1. Stir together soy sauce, rice vinegar, sesame oil, sriracha if using, and black pepper in a small bowl.

2. Heat avocado oil or olive oil in a large skillet over medium-high heat.

3. Add ground chicken and cook for 5 to 6 minutes, breaking it apart, until browned and fully cooked.

4. Stir in garlic and ginger and cook for 30 seconds until fragrant.

5. Add green cabbage, carrots, and purple cabbage to the skillet.

6. Cook for 5 to 7 minutes, stirring often, until the vegetables are tender-crisp.

7. Pour the sauce over the chicken and vegetables and toss well to coat.

8. Cook for 1 to 2 more minutes until the sauce is warm and lightly absorbed.

9. Remove from heat and top with green onions and sesame seeds.

10. Serve hot as-is, over rice, with cauliflower rice, or with noodles.

Notes

Use bagged coleslaw mix to save time, but add it near the end so it does not overcook.

Cook the cabbage uncovered over medium-high heat to keep it tender-crisp instead of soggy.

Add extra sesame oil only at the end if you want stronger nutty flavor, because a little goes a long way.
