Ingredients
1 1/2 pounds boneless skinless chicken breast, cut into bite-size pieces
3 tablespoons cornstarch

3 cups broccoli florets
1 red bell pepper, chopped
1 cup shelled edamame
4 green onions, sliced and divided
3/4 cup roasted unsalted cashews
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/3 cup low-sodium soy sauce
1/3 cup chicken broth
2 tablespoons hoisin sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes, optional
Instructions
1. Whisk together the soy sauce, chicken broth, hoisin sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes in a small bowl.
2. Pat the chicken dry, then toss it with cornstarch, salt, and black pepper until lightly coated.
3. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook for 5 to 7 minutes, turning as needed, until golden and cooked through. Transfer to a plate.
4. Add the remaining oil to the skillet. Stir-fry the broccoli and red bell pepper for 3 to 4 minutes until bright and crisp-tender.
5. Add the edamame and most of the green onions, then cook for 1 minute.
6. Return the chicken to the skillet and pour in the sauce. Stir until everything is coated and the sauce thickens slightly, about 1 to 2 minutes.
7. Stir in the cashews just before serving so they stay crunchy.
8. Serve hot over rice or noodles, topped with the remaining green onions and extra cashews if desired.
