Ingredients
1 3/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons instant espresso powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter softened
1/2 cup brown sugar packed
1/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
3/4 cup buttermilk
4 ounces cream cheese softened
1/4 cup unsalted butter softened for filling
2 cups powdered sugar
1 tablespoon strong brewed espresso or coffee cooled
1 teaspoon vanilla extract for filling
1 pinch salt for filling
2 tablespoons heavy cream as needed
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. Whisk the flour, cocoa powder, espresso powder, baking soda, and salt in a medium bowl.
3. Beat the butter, brown sugar, and granulated sugar in a large bowl until creamy and lighter in color.
4. Add the egg and vanilla extract, then beat until smooth.
5. Add the dry ingredients in two additions, alternating with the buttermilk, and mix just until the batter is combined.
6. Scoop rounded tablespoon portions of batter onto the baking sheets, leaving space between each one.
7. Bake for 9 to 11 minutes, until the tops are set and spring back gently when touched.
8. Cool the shells on the baking sheet for a few minutes, then move them to a wire rack to cool completely.
9. Beat the cream cheese and butter for the filling until smooth and creamy.
10. Add powdered sugar, espresso, vanilla, and salt, then beat until fluffy. Add heavy cream as needed until pipeable.
11. Pair similar-sized shells together, pipe or spoon filling onto one flat side, and top with another shell.
12. Chill the whoopie pies for 20 to 30 minutes before serving so the filling sets.
Notes
Use room-temperature butter, cream cheese, egg, and buttermilk so the batter and filling mix smoothly.
Do not overbake the shells; they should feel set but still soft and springy.
Chill the assembled pies briefly before serving for cleaner edges and a creamier bite.
