Description

Ingredients

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup semi-sweet chocolate chips

1/2 cup fresh strawberries, finely diced and patted dry

1/2 cup semi-sweet chocolate, melted for drizzle


Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy.

4. Mix in the egg and vanilla extract until smooth.

5. Add the dry ingredients to the wet ingredients and mix just until a thick chocolate dough forms.

6. Gently fold in the chocolate chips and diced strawberries.

7. Scoop the dough into balls and place them on the prepared baking sheet, leaving space between each cookie.

8. Press a few extra chocolate chips and strawberry pieces on top if desired.

9. Bake for 10 to 12 minutes, until the edges are set and the centers still look slightly soft.

10. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.

11. Drizzle the cooled cookies with melted chocolate and let the chocolate set before serving.

Notes

Pat the diced strawberries very dry before adding them to the dough so the cookies stay chewy instead of soggy.

Do not overbake the cookies; they should look slightly soft in the center when removed from the oven.

Let the cookies cool completely before adding the chocolate drizzle so the topping sets neatly.
