Ingredients
1 9-inch baked pie crust
1/3 cup strawberry jam
2 cups fresh strawberries, sliced for the bottom layer
2 cups fresh strawberries, halved for the topping
8 ounces cream cheese, softened
3/4 cup powdered sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup heavy whipping cream, cold
3/4 cup semi-sweet chocolate chips
2 tablespoons heavy cream
2 tablespoons chocolate shavings, optional
Instructions
1. Bake the pie crust according to package directions or your homemade crust instructions, then let it cool completely.
2. Wash the strawberries, pat them very dry, remove the stems, then slice half of them and halve the rest for topping.
3. Spread the strawberry jam evenly over the bottom of the cooled crust.
4. Add the sliced strawberries over the jam in an even layer.
5. Beat the softened cream cheese, powdered sugar, vanilla extract, and salt until smooth and creamy.
6. In a separate bowl, whip the cold heavy cream until stiff peaks form.
7. Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
8. Spoon the filling into the crust and spread it evenly over the strawberry layer.
9. Arrange the halved strawberries over the top of the cream filling.
10. Melt the semi-sweet chocolate chips with 2 tablespoons heavy cream until smooth, then let it cool slightly.
11. Drizzle the melted chocolate over the strawberries and sprinkle with chocolate shavings if using.
12. Refrigerate the pie for at least 4 hours, or overnight for the cleanest slices.
Notes
Use dry strawberries only. After rinsing, pat them well with paper towels so the filling stays firm and the chocolate sets properly.
Let the crust cool fully before filling. A warm crust can soften the cream layer and make the pie harder to slice.
For clean slices, chill the pie overnight and wipe the knife between cuts.
