2 tablespoons white miso paste

1/2 cup granulated sugar

1 large egg

2 teaspoons vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon fine sea salt

5 ounces dark chocolate, chopped

1 tablespoon powdered sugar or sesame seeds for topping, optional


Instructions

1. Brown the butter in a saucepan over medium heat until golden and nutty, then pour it into a mixing bowl and cool for 10 minutes.

2. Whisk the white miso into the browned butter until smooth.

3. Add the brown sugar and granulated sugar, then whisk until glossy and thick.

4. Add the egg and vanilla extract, then whisk until smooth.

5. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and fine sea salt.

6. Stir the dry ingredients into the wet mixture just until combined.

7. Fold in the chopped dark chocolate.

8. Cover and chill the dough for at least 45 minutes.

9. Preheat the oven to 350°F and line a baking sheet with parchment paper.

10. Scoop the dough into 2-tablespoon balls and place them several inches apart.

11. Bake for 8 minutes, then lift and firmly tap the pan to create ripples.

12. Continue baking, tapping the pan every 2 minutes, until the cookies are set at the edges, about 12 to 14 minutes total.

13. Cool on the baking sheet for 8 to 10 minutes, then sprinkle with powdered sugar or sesame seeds if desired.

Notes

For the best flavor, use white miso because it is mild, slightly sweet, and balanced.

Do not skip chilling the dough, or the cookies may spread too much before the ripples form.

Bake one tray at a time so the pan-bang method works evenly and the cookies bake with crisp edges.
