Ingredients
¾ cup cottage cheese
½ medium apple, grated
⅓ cup rolled oats
1 tablespoon maple syrup
½ teaspoon ground cinnamon
¼ teaspoon vanilla extract
½ cup shredded coconut (toasted)
Instructions
1. In a bowl, combine cottage cheese, grated apple, oats, maple syrup, cinnamon, and vanilla extract. Mix until well combined.
2. Cover and refrigerate the mixture for 30 minutes to allow it to firm up.
3. While chilling, toast the shredded coconut in a dry pan over medium heat until golden brown, about 2–3 minutes. Let cool.
4. After chilling, scoop out the mixture and roll into bite-sized balls with your hands.
5. Roll each ball in toasted coconut until fully coated.
6. Serve immediately or store in the fridge for up to 5 days.
Notes
Use full-fat cottage cheese for the creamiest texture.
Make sure the mixture is well chilled before shaping — this helps it hold together.
You can freeze the bites for longer storage; just thaw a few minutes before serving.
