Ingredients

1 1/2 cups chocolate cookie crumbs

5 tablespoons unsalted butter, melted

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

4 ounces semisweet chocolate, melted and cooled

2 teaspoons vanilla extract

1/4 teaspoon fine salt

4 pasteurized large eggs

1 cup heavy whipping cream

2 tablespoons powdered sugar

1/2 cup chocolate shavings


Instructions

1. Preheat the oven to 350°F.

2. Mix the chocolate cookie crumbs with melted butter until evenly moistened.

3. Press the crumb mixture into a 9-inch pie plate and bake for 8 to 10 minutes. Cool completely.

4. Melt the semisweet chocolate gently, then let it cool until smooth but not hot.

5. Beat the softened butter and granulated sugar until pale, fluffy, and smooth.

6. Add the cooled melted chocolate, vanilla extract, and salt, then beat until combined.

7. Add the pasteurized eggs one at a time, beating well for several minutes after each addition.

8. Spoon the filling into the cooled crust and smooth the top.

9. Refrigerate for at least 4 hours, or overnight for the best texture.

10. Beat the heavy whipping cream with powdered sugar until soft peaks form.

Notes

Use pasteurized eggs because the filling is not baked after the eggs are added.
