Ingredients
1 pound fresh green beans, trimmed
1/2 cup sliced almonds
2 tablespoons unsalted butter
1 tablespoon olive oil
1 small shallot, finely chopped
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
3/4 teaspoon kosher salt, divided
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Bring a large pot of water to a boil and season it with 1/2 teaspoon kosher salt.
2. Add the green beans and cook for 3 to 4 minutes, until bright green and crisp-tender.
3. Transfer the beans to a bowl of ice water for 2 minutes, then drain and pat dry.
4. Heat the butter and olive oil in a large skillet over medium heat.
5. Add the sliced almonds and cook for 2 to 3 minutes, stirring often, until lightly golden.
6. Stir in the shallot and cook for 1 minute, then add the garlic and cook for 30 seconds.
7. Add the green beans to the skillet and toss until coated and warmed through.
8. Stir in the lemon juice, lemon zest, remaining salt, black pepper, and parsley.
9. Transfer to a serving platter and spoon the toasted almond mixture over the top.
