Ingredients

1 cup frozen blueberries

1 scoop vanilla protein powder

1/2 cup plain Greek yogurt or blended cottage cheese

2 tablespoons softened cream cheese

3/4 cup milk of choice

1 tablespoon sugar-free cheesecake pudding mix

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 to 2 tablespoons honey, maple syrup, or sugar-free sweetener

1 pinch salt

2 tablespoons crushed graham crackers

1 to 2 tablespoons extra milk for re-spin if needed


Instructions

1. Add the blueberries, protein powder, Greek yogurt or cottage cheese, cream cheese, milk, pudding mix, vanilla extract, lemon juice, sweetener, and salt to a blender.

2. Blend until completely smooth, scraping down the sides so the cream cheese fully blends into the base.

3. Pour the mixture into a Ninja Creami pint container, keeping it below the max fill line.

4. Smooth the top, cover the pint, and freeze on a level surface for at least 24 hours.

5. Remove the frozen pint from the freezer and let it sit at room temperature for 5 to 10 minutes.

6. Place the pint into the Ninja Creami machine and process on the Lite Ice Cream setting.

7. If the texture looks crumbly, add 1 to 2 tablespoons of milk and run the Re-Spin setting.

8. Add crushed graham crackers and use the Mix-In setting, or sprinkle them on top before serving.

9. Scoop into bowls and serve immediately with extra blueberries or more graham cracker crumbs.

Notes

Use softened cream cheese so the base blends smooth without small lumps.

Re-spin with a splash of milk if the first spin looks powdery or crumbly.
