Ingredients

4 cups potatoes, peeled and diced

3 cups broccoli florets

1 small onion, diced

3 cloves garlic, minced

1 cup carrots, shredded

4 cups chicken broth

2 cups shredded sharp cheddar cheese

1 cup heavy cream

3 tablespoons butter

3 tablespoons all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Peel and dice the potatoes, chop the broccoli, dice the onion, mince the garlic, and shred the carrots if needed.

2. Add the potatoes, onion, garlic, carrots, and chicken broth to the crockpot.

3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the potatoes are tender.

4. In a small saucepan, melt the butter, stir in the flour, and whisk until smooth.

5. Add the heavy cream to the butter and flour mixture, whisking until creamy.

6. Stir the cream mixture into the crockpot.

7. Add the broccoli florets and shredded cheddar cheese during the last 30 minutes of cooking.

8. Stir well until the cheese is melted and the soup is creamy.

9. Season with salt and black pepper.

10. Mash a few potatoes in the soup if you want a thicker texture.

11. Serve hot with extra cheddar on top if desired.
