Ingredients
2 pounds chicken breasts
10 ounces Rotel (diced tomatoes with green chilies)
10.5 ounces cream of chicken soup
8 ounces cream cheese, cubed
0.5 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
0.5 teaspoon black pepper
12 ounces spaghetti
2 cups shredded cheddar cheese
1 tablespoon chopped parsley (optional)
Instructions
1. Place chicken breasts into the crockpot. Add Rotel, cream of chicken soup, cubed cream cheese, and chicken broth. Sprinkle garlic powder, onion powder, and black pepper on top.
2. Cover and cook on low for 5-6 hours or high for 3-4 hours, until chicken is cooked through.
3. Remove the chicken, shred it using two forks, and return it to the crockpot. Stir everything together until creamy.
4. Cook spaghetti according to package instructions, drain, and add to the crockpot. Add shredded cheddar cheese. Stir well to combine.
5. Serve hot with a sprinkle of fresh parsley if desired.
Notes
Always cook the pasta separately to avoid sogginess in the crockpot.
For extra spice, use hot Rotel or stir in red pepper flakes.
