Description

Creamy Easy Boursin Orzo Bake is a cozy, cheesy, easy dinner that turns orzo, Boursin cheese, cherry tomatoes, spinach, and Parmesan into a creamy baked pasta dish with very little effort. Ingredients

1 1/2 cups orzo

1 5.2-ounce package Garlic & Fine Herbs Boursin cheese

2 cups cherry tomatoes, halved

3 cups fresh spinach

2 cups chicken broth or vegetable broth

1/2 cup heavy cream

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 tablespoon lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh basil or parsley, chopped


Instructions

1. Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish.

2. Add the orzo, garlic, Italian seasoning, salt, black pepper, olive oil, broth, and heavy cream to the dish, then stir until evenly combined.

3. Place the Boursin cheese in the center of the dish and scatter the cherry tomatoes around it.

4. Cover tightly with foil and bake for 25 minutes.

5. Remove the foil, stir the softened Boursin into the orzo, and check if the pasta is tender. If needed, cover and bake for 5 to 8 more minutes.

6. Stir in the fresh spinach until it wilts into the hot orzo.

7. Sprinkle Parmesan and mozzarella over the top, then bake uncovered for 8 to 10 minutes until melted and lightly golden.

8. Let the bake rest for 5 minutes, then finish with lemon juice and fresh basil or parsley before serving.

Notes

Use vegetable broth to keep this dish vegetarian, or chicken broth for a richer savory flavor.

If the orzo looks dry before it is fully tender, stir in 1/4 cup warm broth or cream and continue baking.

Let the dish rest before serving because the sauce thickens as the orzo absorbs the creamy Boursin mixture.
