Ingredients
1 cup cold milk
1 package 3.4 ounces instant vanilla pudding mix
1 package 3 ounces strawberry gelatin mix
8 ounces whipped topping thawed
2 cups fresh strawberries diced
1 cup crushed pineapple well drained
2 cups mini marshmallows
1 cup small-curd cottage cheese
1 teaspoon vanilla extract
1/2 cup extra mini marshmallows or sliced strawberries for topping
Instructions
1. Whisk the cold milk, instant vanilla pudding mix, and strawberry gelatin mix in a large bowl until smooth and slightly thickened.
2. Let the mixture sit for 3 to 5 minutes so the pudding begins to set.
3. Fold in the thawed whipped topping gently until the mixture is light, creamy, and evenly pink.
4. Add the diced strawberries and well-drained crushed pineapple, then fold gently to combine.
5. Fold in the mini marshmallows, cottage cheese, and vanilla extract until everything is evenly mixed.
6. Cover the bowl and refrigerate for at least 1 hour, or up to overnight.
7. Stir gently before serving, then top with extra mini marshmallows or sliced strawberries.
Notes
Drain the crushed pineapple very well before adding it so the salad stays thick and creamy.
For the best texture, chill the salad for at least 1 hour before serving so the marshmallows soften.
Add extra fresh strawberries on top right before serving for the prettiest presentation.
