Ingredients
1 pound fresh asparagus, trimmed
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
3/4 cup freshly grated Asiago cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Olive oil spray, as needed
2 tablespoons fresh parsley, chopped
1 lemon, cut into wedges
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Rinse the asparagus, trim the woody ends, and dry the spears very well.
3. Place the flour in one shallow bowl, the beaten eggs in a second bowl, and the panko, Asiago, garlic powder, Italian seasoning, salt, and black pepper in a third bowl.
4. Dip each asparagus spear into the flour, then the egg, then the panko-Asiago mixture, pressing gently so the coating sticks.
5. Arrange the coated asparagus on the prepared baking sheet in a single layer.
6. Lightly spray the tops with olive oil spray.
7. Bake for 12 to 15 minutes, or until the asparagus is tender and the coating is golden and crisp.
8. Sprinkle with fresh parsley and serve warm with lemon wedges.
Notes
Dry the asparagus well before coating so the crumbs stick and bake up crisp.
Use freshly grated Asiago for the best flavor and better browning.
Reheat leftovers in the oven or air fryer instead of the microwave to bring back the crunch.
