  • Author: Sally Roberts
  • Total Time: 8 hours 25 minutes
  • Yield: 12 sliders

Description

Crockpot Pot Roast Sliders are a warm, hearty, easy dinner packed with tender shredded beef, melty provolone, and soft buttery buns. This easy recipe is perfect for dinner ideas, game day food, party sandwiches, comfort food cravings, and food ideas when you need a crowd-pleasing meal with very little hands-on work.

Ingredients

3 lb beef chuck roast

1 medium onion, sliced

3 cloves garlic, minced

1 cup beef broth

1 tbsp Worcestershire sauce

1 tsp Italian seasoning

1 tsp salt

1/2 tsp black pepper

12 slider buns

6 slices provolone cheese, halved

1/2 cup pepperoncini or pickled jalapeños

2 tbsp butter, melted

1 tbsp fresh parsley, chopped

Instructions

1. Pat the chuck roast dry and season it with salt, black pepper, and Italian seasoning.

2. Add the sliced onion and minced garlic to the crockpot, then pour in the beef broth and Worcestershire sauce.

3. Place the seasoned roast into the crockpot, cover, and cook on low for 8 to 9 hours or on high for 4 to 5 hours until fork-tender.

4. Remove the roast and shred it with two forks, then spoon some of the cooking liquid over the beef to keep it juicy.

5. Slice the slider buns and place the bottom halves in a baking dish or on a sheet pan.

6. Pile the shredded beef onto the buns, then top with provolone cheese and pepperoncini or pickled jalapeños.

7. Add the top buns, brush them with melted butter, and bake at 350°F for 10 minutes until the cheese is melted and the tops are lightly golden.

8. Sprinkle with fresh parsley and serve warm.

Notes

Use chuck roast for the best tender, shreddable texture after slow cooking.

Do not soak the buns with too much liquid or the sliders may turn soggy.

For the best texture, store leftover beef separately and assemble fresh sliders when reheating.
