Ingredients
2 pounds beef chuck, cut into 1 1/2-inch cubes

1 medium yellow onion, diced
4 cloves garlic, minced
8 ounces mushrooms, sliced
1 can 14.5 ounces diced tomatoes
2 tablespoons tomato paste
3 cups beef broth
1 tablespoon Worcestershire sauce
2 tablespoons olive oil
3 tablespoons all-purpose flour
1 teaspoon smoked paprika
1 teaspoon dried thyme
2 bay leaves
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Pat the beef dry, then toss it with flour, smoked paprika, dried thyme, salt, and black pepper.
2. Heat olive oil in a large skillet over medium-high heat and brown the beef in batches.
3. Transfer the browned beef to the crockpot.
4. Add onion to the same skillet and cook for 2 to 3 minutes, then stir in garlic and tomato paste for 1 minute.
5. Spoon the onion mixture into the crockpot.
6. Add sweet potatoes, carrots, celery, mushrooms, diced tomatoes, beef broth, Worcestershire sauce, and bay leaves.
7. Stir gently, cover, and cook on low for 7 to 8 hours or on high for 4 to 5 hours.
8. Remove the bay leaves and taste the stew.
9. Adjust salt and pepper as needed.
10. For a thicker stew, mash a few sweet potato pieces into the broth.
11. Serve warm with chopped fresh parsley.

Cut the sweet potatoes into larger chunks so they hold their shape during slow cooking.
