Ingredients
2 ribeye or New York strip steaks, about 1 pound each
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
6 tablespoons unsalted butter, softened
3 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1/2 teaspoon paprika
1/4 teaspoon crushed red pepper flakes
Instructions
1. Pat the steaks dry with paper towels and season both sides with salt and black pepper. Let them sit at room temperature for 20 to 30 minutes.
2. In a small bowl, mix the softened butter, garlic, parsley, chives, lemon juice, lemon zest, Dijon mustard, paprika, and red pepper flakes until smooth.
3. Heat a large heavy skillet over medium-high to high heat and add the olive oil.
4. Place the steaks in the hot skillet and sear for 3 to 4 minutes on the first side without moving them.
5. Flip the steaks and cook for another 3 to 4 minutes for medium-rare, or longer depending on thickness and desired doneness.
6. Transfer the steaks to a plate or cutting board and let them rest for 5 to 10 minutes.
7. Top the hot steaks with generous spoonfuls of cowboy butter and let it melt over the surface.
8. Slice against the grain and serve with extra cowboy butter spooned over the top.
