Description

Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and cubed

1 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 tsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 avocado, sliced or mashed

1 cup pico de gallo

1/2 cup plain Greek yogurt or sour cream

1/4 cup crumbled cotija or feta cheese

2 tbsp fresh cilantro, chopped

1 lime, cut into wedges


Instructions

1. Peel and cube the sweet potatoes, then boil them in salted water for 12 to 15 minutes until fork tender. Drain and mash lightly with a pinch of salt.

2. Heat olive oil in a large skillet over medium heat. Add the onion and cook for 3 to 4 minutes until softened.

3. Stir in the garlic and cook for 30 seconds until fragrant.

4. Add the ground turkey and cook for 6 to 8 minutes, breaking it apart with a spoon, until fully cooked and lightly browned.

5. Season the turkey with chili powder, cumin, smoked paprika, salt, and black pepper. Stir well and cook for 2 more minutes.

6. Divide the mashed sweet potatoes among 4 bowls.

7. Top each bowl with the seasoned ground turkey, avocado, pico de gallo, and Greek yogurt or sour cream.

8. Finish with crumbled cotija or feta, fresh cilantro, and a squeeze of lime before serving.

Notes

Use roasted sweet potatoes instead of boiled if you want a deeper, caramelized flavor.

Store the turkey and sweet potatoes separately from the fresh toppings for the best meal prep texture.

Add black beans, rice, or corn if you want to make the bowls even heartier.
