Ingredients

2 pounds boneless skinless chicken thighs

1 can (20 ounces) pineapple chunks, drained

1 cup pineapple juice

1/2 cup low-sodium soy sauce

1/2 cup brown sugar

1/4 cup ketchup

3 cloves garlic, minced

1 teaspoon grated fresh ginger

2 tablespoons cornstarch

2 tablespoons water

2 green onions, sliced

1 teaspoon sesame seeds


Instructions

1. Place the chicken thighs in the crockpot and top with the pineapple chunks.

2. In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.

3. Pour the sauce over the chicken and pineapple in the crockpot.

4. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 1/2 hours, until the chicken is tender and fully cooked.

5. In a small bowl, stir together the cornstarch and water until smooth.

6. Add the cornstarch slurry to the crockpot during the last 20 to 30 minutes of cooking and stir gently.

7. Cover again and let the sauce thicken.

8. Serve hot over rice and garnish with sliced green onions and sesame seeds.

Notes

Use chicken thighs for the juiciest texture after slow cooking.

Drain the pineapple chunks well so the sauce does not get too thin.

For a thicker glaze-like sauce, let the crockpot cook uncovered for the last 10 minutes after adding the slurry.
