Ingredients
4 medium sweet potatoes
1 tablespoon olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
4 tablespoons butter
1 tablespoon chopped fresh parsley
1/2 teaspoon flaky sea salt
Instructions
1. Preheat the oven to 425°F.
2. Wash and scrub the sweet potatoes well, then dry them completely.
3. Rub the sweet potatoes with olive oil and season all over with kosher salt and black pepper.
4. Pierce each sweet potato several times with a fork.
5. Place them on a parchment-lined baking sheet.
6. Bake for 45 to 60 minutes, or until very tender in the center.
7. Remove from the oven and let them cool for a few minutes.
8. Slice each sweet potato open down the middle and gently press the ends to open.
9. Fluff the inside with a fork.
10. Top each one with butter, fresh parsley, and flaky sea salt.
11. Serve hot.
Notes
Choose sweet potatoes that are close in size so they bake evenly.
For the best texture, bake them without foil so the skins roast instead of steaming.
Add toppings right before serving so the butter melts smoothly and the parsley stays fresh.
